LOCAL FLAVOURS OF BURSA
Gedelek Pickles
Named after the village of Gedelek in the Orhangazi district of Bursa, pickle is a world-renowned flavour. It is said that the quality and flavour of the pickles produced in the region is due to the high calcium lime water of the region used in the production of pickles. This pickle is exported all over the world.
Bursa Raspberry and Blackberry
These berries, which grow in the rich plant diversity on the Uludağ foothills of Bursa, are collected by local people living in the mountain villages of this region. Due to the favourable climate of the region, Bursa is a city where high quality blackberries and raspberries are grown.
Bursa accounts for 80 per cent of Turkey’s total blackberry production. Due to the favourable climate of the region, Bursa is a city where quality blackberry and raspberry products are grown. Completely organic and natural blackberries are grown in the forests of Uludağ. Turkey’s need for raspberries and blackberries is met by 90% of the products grown in Bursa.
There is an increase in the amount and area of raspberry production in our province over the years. In the last five years, our production of 4.113 tonnes has increased to 4.937 tonnes and our area of 4.916 da has increased to 6.903 da. The importance of raspberry, which has various ways of consumption and its cultivation is quite effortless, is better understood day by day in our country as well as in our province. The fact that the fruit, whose roots are perennial but branches are biennial, is renewed every year distinguishes it from other crops. With raspberries, which have high added value, it is possible to diversify the income of our producers as well as allowing our consumers to consume healthy products. Raspberry fruit is very useful for the digestive system. It facilitates digestion and helps to open the appetite. Raspberry juice, which tastes quite pleasant, strengthens the immune system with the vitamins it contains. Raspberry has a structure that gives energy and vitality to the body. The amount of calories is low (about 1 handful of 60 calories) is a fruit that dieters can easily consume. Stabilises blood sugar. It is rich in omega 3 and omega 6 fatty acids. It has the properties of repairing the nervous system, protecting against depression and strengthening memory.
A raspberry festival is organised in Cumalıkızık every year.
Bursa Strawberry
It is produced in Keles, Orhaneli, Harmancık and Büyükorhan districts known as the mountain districts of Bursa. Compared to other strawberry varieties, this organic strawberry variety, which is small in size, pink in colour and has unique characteristics with its aroma and smell, is very delicious.
It is harvested towards the end of April every year. It is in high demand in the Turkish market and is also exported abroad. It is especially recommended for jam making.
In addition, in the Kurşunlu town of İnegöl, a delicious type of strawberry known as seviveren is grown.
Bursa Apolyont Cherry
This cherry, which takes its name from Apolyont, the old name of Gölyazı Village of Bursa, has a special place among other types of cherries because it is both large and red. This fruit, which is one of the local products of Bursa, was first grown around Gölyazı and Uluabat Lake and then spread all over the world. Today, this cherry, which is produced around Lake Iznik and Bursa plain, especially in Keles, Orhaneli, Harmancık and Büyükorhan districts, is exported to many countries of the world as well as domestic market demand.
Bursa Peach
Bursa peach, which has many different types, is one of the most favourite fruits of the summer months. The most important feature of the juicy and sweet Bursa peach is that its skin is hairy.
Among the peaches, the one whose core is easily separated is called split peach, and the one that sticks to the flesh is called meat peach. Split peaches are generally consumed fresh. Meat peaches are canned and jam is produced.
Bursa Black Fig
Black fig, one of the products of the fertile lands of Bursa, is considered to be the highest quality table fig in the world with its external appearance, size, sweet and juicy inner structure. The quality of this product, whose fame spreads around the world, comes from the suitability of Bursa’s climatic conditions.
There is a great demand for this fig type from Turkey and the world. Bursa Black Figs received a geographical indication in 2018.
Bursa Gemlik Olive and Olive Oil
The olives grown in the districts of Gemlik, Orhangazi and Iznik in Bursa are known as the best quality table olives in Turkey.
In addition, Mudanya and Trilye are regions that have had a say in olive oil production for centuries. Soap and cosmetic products are obtained from these olive oils.
Bursa Spring Waters
Bursa is one of the richest cities in Turkey in terms of water and mineral water resources. Most of the companies producing water and mineral water in Turkey make production by utilising the resources of Uludağ.
In history, what attracted the most attention of travellers visiting Bursa is explained as the fact that there are waters and fountains flowing from all over the city. Even books have been written about the waters of Bursa. Evliya Çelebi completed his Bursa Seyehatnamesi with the following words: ‘In short, Bursa consists of water.’
